1 lg. sweet potato, grated
2 c. milk
1 c. sugar
1/2 stick butter, melted
3 eggs, beaten
1 tsp. pumpkin pie spice

Mix all ingredients together and pour into a greased or non-stick baking dish. Bake at 400 degrees for 45 minutes.
