PEACH POTATO PUFFS 
2 c. mashed sweet potatoes
1 tsp. lemon juice
2 tbsp. brown sugar
1/4 tsp. salt
2 tbsp. butter
6 canned peach halves

Combine potato, lemon juice, brown sugar, dash of spice (cinnamon, cloves or nutmeg) and butter. Whip until fluffy. Arrange peaches in a greased 10 x 6 x 2 inch baking dish; fill with potato mixture. Dot with butter and bake 20 minutes at 400 degrees.
