POTATO PUFF 
2 c. hot mashed potatoes, white or sweet
2 eggs
2 tbsp. butter
1 c. milk

Beat egg yolks until light. Beat egg whites stiff. Mix potatoes, butter and milk to yolks; blend well. Add to beaten egg whites; mix lightly. Put in well-greased baking dish in moderate oven for 10 minutes.
