MOM GEORGE'S LEMON SPONGE PIE 
4 eggs, separated
1 1/2 c. sugar
1 1/4 c. milk
4 level tbsp. all-purpose flour
2 tbsp. melted butter
Juice of 2 lemons
Grated rind of 1 lemon (Note: if lemons are extra lg., cut back a little on the rind and juice)
Pinch of salt

Heat oven to 400 degrees. In large bowl, mix all ingredients EXCEPT egg whites. In another bowl, beat egg whites until stiff and then fold them into the mixture.

Pour into 9 inch deep dish pie plate and bake at 400 degrees until the top is slightly brown. Reduce heat to 325 degrees and bake until done (about 25 minutes more).
