HASH BROWN POTATO CASSEROLE 
2 lb. pkg. frozen hash brown potatoes, thawed
1/2 c. melted butter
1 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
2 cans cream of chicken soup
1 pt. sour cream
2 c. sharp Cheddar cheese, grated
Bread crumbs

Mix well together and pour into 3 quart casserole dish. Top with bread crumbs (or crushed corn flakes) and dot with butter. Bake at 350 degrees for 1 hour. Serves 12-16.
