SCALLOPED POTATOES WITH CHEESE &
BROCCOLI
 
4 to 5 baking potatoes
1 1/2 c. chopped broccoli
3 tbsp. butter
1/8 tsp. salt & pepper
1/8 tsp. garlic powder
3 tbsp. flour
1 c. grated cheddar cheese
2 tbsp. grated Parmesan cheese
1/2 c. thinly sliced onion
2 1/2 c. low-fat milk

Cut potatoes into 1/4 inch slices. Steam broccoli until tender. Grease 8 inch square baking pan. Line the bottom with 1/3 of the potatoes. Top with half of the flour and cheeses. Add onion. Repeat a layer of potatoes, top with broccoli, salt, pepper and garlic powder and cheddar cheese. Add remaining potatoes, pour milk over the top and sprinkle with remaining Parmesan cheese. Put in 350 degree oven and bake 1 to 1 1/2 hours until potatoes are tender and sauce is bubbly.
