GOURMET CHEESE POTATOES 
6 medium potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
1 1/2 c. sour cream or 1 c. milk
paprika
1/3 c. finely chopped onions (optional)
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes in skin. Cool and peel, then grate. Heat cheese and butter; melt. Blend in milk, onion and seasoning. Add potatoes. Put into greased casserole dish. Dot with butter; sprinkle with paprika.

Bake at 350°F for 30 minutes.
