TURKEY CHOWDER | |
1 med. chopped onion (1/2 c.) 2 stalks celery, sliced 3 tbsp. butter 2 tbsp. flour 2 lg. carrots, thinly sliced 3 c. milk 1 c. diced turkey 1/2 tsp. salt 1/8 tsp. pepper 2 c. broth 1 pkg. frozen mixed vegetables 8 oz. American cheese, diced Chopped parsley Cook celery and onion in butter 5 minutes. Blend in flour, salt and pepper. Gradually add broth. Heat and stir until boiling. Add vegetables. Cover and simmer 5 minutes. Stir in cheese, turkey, parsley and milk. Heat slowly and stir often until cheese melts. For broth, bread up carcass of turkey and heat in large pan. Add 2 cups water. Use onion and celery tops. Cook 2 hours and strain. Makes 2 cups with water. |
