SUNDAY TURKEY MEATLOAF 
My family thought this was the best, and leftovers made great sandwiches!

2 1/2 lb. ground turkey
2 eggs
1 pkg. dry onion soup mix (Lipton)
1/2 cup ketchup (Hunts)
1 full sleeve regular crackers (saltines), crumbed well
1/2 cup oatmeal
1 1/2 cups water
1 tbsp. dried parsley
coarse ground pepper, to taste
3 slices bacon, cut in half

GLAZE:

1/2 cup ketchup (Hunts)
3 tbsp. brown sugar
2 tsp. liquid smoke
shake or two of cayenne pepper (may omit)

In a large bowl mix together all ingredients, do not over mix as it will toughen the meat.

Place in an 8x8-inch pan. Shape the mixture into a loaf. Cover top with bacon slices (I use 3 slices cut in half).

Bake in a 375°F oven for 60 to 70 minutes or until a meat thermometer registers 180°F and the bacon is crisp.

Top with glaze and bake another 5 to 7 minutes.
