LISA'S MEATLOAF (YUMMY!!) 
BEFORE MEAT:

1/2 cup milk
2 eggs
2 tsp. mustard
2 tsp. hot sauce
1 tsp. marjoram
1 tsp. salt
1/2 tsp. thyme
1/2 tsp. pepper

AFTER MEAT:

2 lb. meat (pork, beef, venison, even sausage!)
1/3 to 1/2 cup old-fashioned oatmeal
1/3 to 1/2 cup Italian bread crumbs (can substitute oatmeal and breadcrumbs for four slices of bread)
1/4 cup parsley

VEGETABLES:

1/2 red or yellow bell pepper
1/2 celery stalk
1/2 onion
1/2 carrot
3 tbsp. fresh minced garlic

GLAZE:

1 cup ketchup (Hunts)
5 tbsp. brown sugar
5 tbsp. apple cider vineger

Prepare glaze first.

In a separate sauté pan, cook vegetables and your choice of fat (I use bacon fat) until slightly brown and semi soft. Add garlic last to prevent burning.

Mix in bowl first set of ingredients. Add your choice of meat along with rest of ingredients. Add in sautéed vegetables.

Put in loaf pan. Top with some of the glaze and bake at 375°F uncovered for 45 to 60 minutes or until cooked through and brown around edges.

Use the rest of the glaze for dipping!

Variation: You can substitute the vegetables for anything... or not use them at all!
