TURKEY CHEESE CHOWDER 
1 c. finely chopped green onion
1 c. finely chopped celery
1/4 c. flour
2 c. half and half or milk
Dash of cayenne pepper
2 c. diced cooked turkey
1 c. finely chopped carrots
1/4 c. butter
2 c. turkey broth
1/4 tsp. pepper
1 1/2 c. shredded sharp Cheddar cheese

Saute onions, carrots, and celery in butter until soft, but not brown; blend in flour. Gradually stir in broth, then half and half. Cook, stirring constantly until mixture thickens. Stir in pepper, cayenne, cheese and turkey. Heat just until cheese melts.
