ENCHILADAS 
2 lbs. ground beef
1 can of mild or hot enchilada sauce
1 pkg. of Cheddar cheese (shredded)
1 head of lettuce (diced)
1 to 2 onions (diced)
1 to 2 tomatoes (diced)
1 can of water
2 tbsp. of flour
2 tbsp. of oil
1 pkg. corn tortillas

Brown beef, drain. Mix flour and oil together. Add water to sauce and flour and oil to sauce, bring enchilada sauce to a boil. Fry tortillas 1 at a time. Dip in sauce, lay on plate. Add hamburger, onion, lettuce, tomatoes, and cheese. 3 layers, add final sauce over top. Serves 3 to 4 people.
