OPEN FACED ENCHILADAS 
1 lb. hamburger
2 sm. onions
1 (32 oz.) can enchilada sauce
2 dozen corn tortillas
1 lb. grated cheddar cheese
Lettuce
Tomatoes

Brown hamburger meat with 1 small onion. Heat enchilada sauce. Cut up lettuce, tomato, and remaining onion. Fry tortillas and dip in enchilada sauce. Place on plate and top with hamburger meat, cheese, lettuce, tomato and onion. You may add more enchilada sauce over top if you like.
