CHEESY CHICKEN POTATO SOUP | |
I like to add a little pepper and Ritz crackers in my own bowl! Haha enjoy! =) 8 large potatoes 6 cups water 1 or 2 cans canned chicken breast (your choice) 16 oz. Velveeta cheese (1/2 block) 1 tbsp. butter 2 cups whole or 2% milk 1 can original or mild Rotel 1/2 tsp. cilantro 1 tsp. salt Peel and dice potatoes. In a large pot, boil potatoes in water (3-inches or more above potatoes) until potatoes are soft. Add 6 cups water and chicken let boil then add 1/2 block Velveeta cheese, butter, and 2 cups of milk. Stir until cheese is completely melted. Stir in all the remaining ingredients which are Rotel, cilantro and salt. Let stand about 6-10 minutes with lid on the pot. When the 6-10 minutes is up stir the soup and start spooning some out into your bowl but share with the family! You'll love it! Submitted by: Bethany Davidson |
