MARIE'S CABBAGE AND RICE
CASSEROLE
 
1 med. head cabbage, shredded
1 pt. water
1 tsp. salt
1 cube butter
1/2 c. Minute Rice

Cook cabbage, water, salt, and butter; add rice and let stand.

WHITE SAUCE:

2 tbsp. butter
3 tbsp. flour
1 c. milk
3/4 c. shredded Velveeta cheese

Place cooked drained cabbage and rice in a flat casserole and cover with white sauce. Bake at 350 degrees for 20-30 minutes.

This was a hit at family dinner tonight! Instead of using instant rice, I used regular long grain white rice, added cut up zucchini to my cabbage and I didn't drain the water after the vegetables cooked. It made enough for a crowd and it was easy. I will definitely make this again!
