STACKED APPLES 
4-5 apples
Juice of 2 lg. lemons
1 1/2 c. sugar
3 eggs
1 1/2 tbsp. melted butter
1 c. flour
3/4 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
3/4 c. milk
2 1/2 tbsp. oil

Peel, core, slice (5 or 6 slices per apple); set aside. Mix butter and sugar. Add lemon juice. Add lightly beaten eggs. Bring to boil, stir until clear and thick (about 10 minutes). Set aside.

Mix flour, baking powder, salt, egg, milk and oil into a smooth batter. Dip apple slices into batter. Fry in hot oil until brown on both sides. Stack in bowl. Drip lemon sauce over each slice as you place in dish. Delicious as a dessert or as a main side dish.
