MICROWAVE PEANUT BUTTER BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 1/2 c. raw peanuts
1/4 tsp. salt
1 tbsp. butter
1 tsp. vanilla extract
1 tsp. baking soda

Combine sugar, corn syrup, peanuts, and salt in a deep 3-quart casserole; mix well. Microwave at HIGH for 8 1/2 minutes or until light brown. Add butter and vanilla, mixing well. Microwave for 1 minute or until mixture reaches hard crack stage (300°F). Stir in soda; pour onto a buttered cookie sheet, spreading thinly. Let cool. Break into pieces.

Yield: about 1 pound.

Since microwave ovens vary in power, you may need to adjust your cooking time.
