PORK CHOPS WITH APPLE STUFFING 
2 THICK loin pork chops
1 sm. onion, chopped
1/2 tbsp. bacon fat
1 tart apple
1 tbsp. sugar
1/2 c. dry bread crumbs
Salt and pepper

Have (or do yourself) a pocket cut in chop next to bone. Cook onion in fat until slightly yellow, add chopped apple and sugar and cook until heated through. Add crumbs and season to taste with salt and pepper. Season inside of pockets with salt and fill with stuffing. Sew or skewer opening. Brown chops on both sides in a small amount of fat over moderate heat. Place in baking dish (or roaster). Drain fat from pan, add about 1/2 to 3/4 cup water, heat and scrape sides and bottom. Pour this liquid over chops in baking dish. Cover and bake in moderate 350 degree oven until done (about 1 1/4 hours). Uncover and let brown.

For more than 2 chops, double stuffing accordingly. Stuffing leftover can be baked in a small casserole, adding a little of liquid in fry pan to casserole.
