BANANA - CHOCOLATE CHIP MUFFINS 
1 cup sugar
1 egg
1/2 cup (1 stick) butter, at room temperature
1 cup mashed ripe bananas (2 medium)
3 tbsp. milk
1 cup whole-wheat flour
1 cup unbleached all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 cup chocolate chips
1 cup chopped walnuts

Preheat oven to 375°F. Grease and flour muffin pans or line with papers.

In the bowl of an electric mixer, combine butter and sugar; beat until thoroughly blended. Add the rest of the ingredients except walnuts to the electric mixer bowl and beat at low until dry ingredients are moistened. Turn to high and beat until smooth. Blend in walnuts by hand. Spoon batter into muffin cups until 2/3 full.

Reduce oven temperature to 350°F and bake for 15 to 17 minutes or until a toothpick inserted in the center comes out clean and dry. Remove from oven and allow to cool in pan for 10 minutes before turning out.

Be sure to remember to drop the oven temp to 350°F after preheating to 375°F. Also 30 minutes baking time is better. I've made quite a few batches... I'm addicted & get compliments on them.

Like the first review, we loved these. I put in one cup of brown sugar instead of white sugar, and only 1 tbsp of milk. I found it confusing that the recipe says preheat to 375°F, and then it says at the end to bake at 350°F. I preheated to 350°F and baked for 20, and then turned it up for another 5 to 10 minutes. They were perfectly crispy-ish on the top and baked right through.

This is my go to recipe for breakfast on the run! Everyone that tries them, loves them! I preheat my oven to 375°F and leave it at 375°F while I bake them (usually 17 minutes is enough). They turn out great every single time!
