COCOA BANANA BARS | |
2/3 c. Quaker Oat Bran hot cereal, uncooked 2/3 c. all-purpose flour 1/2 c. granulated sugar 1/3 c. cocoa 1/2 c. mashed ripe banana (about 1 lg.) 1/4 c. liquid vegetable oil butter 3 tbsp. light corn syrup 2 egg whites, slightly beaten 1 tsp. vanilla 2 tsp. cocoa 2 tsp. liquid vegetable oil butter 1/4 c. powdered sugar 2 to 2 1/2 tsp. warm water Heat oven to 350 degrees. Lightly spray 8-inch square baking pan with vegetable oil cooking spray or oil lightly. Combine oat bran, flour, granulated sugar and 1/3 cup cocoa. Add combined banana, 1/4 cup butter, corn syrup, egg whites and vanilla; mix well. Pour into prepared pan, spreading evenly. Bake 23 to 25 minutes or until center is set. Cool on wire rack; cut into bars. Store tightly covered. Top with strawberry halves, if desired. Combine 2 teaspoons cocoa and 2 teaspoons butter. Stir in powdered sugar and 1 teaspoon water. Gradually add remaining 1 to 1 1/2 teaspoons water to make a medium-thick glaze, mixing well. Drizzle glaze over brownies. Makes 9 servings. MICROWAVE DIRECTIONS: Combine oat bran, flour, granulated sugar and 1/3 cup cocoa. Add combined banana, 1/4 cup butter, corn syrup, egg whites and vanilla; mix well. Pour into 9-inch microwavable pie plate, spreading evenly. Place in microwave on inverted microwavable plate. Microwave at high 4 minutes 30 seconds to 5 minutes or until edges are firm to touch, rotating every 2 minutes. To test for doneness, the surface is firm to the touch and the center may appear slightly wet and soft. Cool; cut into wedges. Store tightly covered. Top with strawberry halves, if desired. Combine 2 teaspoons cocoa and 2 teaspoons butter. Stir in powdered sugar and 1 teaspoon water. Gradually add remaining 1 to 1 1/2 teaspoons water to make a medium-thick glaze, mixing well.
