NEW YEAR'S SAUERKRAUT 
1 pork roast, about 4 lb.
1 lg. can sauerkraut
2 cooking apples, chopped
1/4 c. brown sugar

Mix sauerkraut, apples, and brown sugar. Place in bottom of roasting pan, put roast on top; cover. Bake at 350 degrees for 4 or 5 hours. Serves 12.

My husband loved this! I added a few of my own tweaks, I seasoned the roast with fresh ground pepper, seasoned salt, garlic powder and paprika, browned it before putting it in the oven and I added applesauce, onions and chicken broth to the sauerkraut.
