APPLE BREAD PUDDING 
1 c. milk
1/3 c. non-fat dry milk powder
1/4 c. honey (opt.)
2 tbsp. lemon juice
1/2 c. cottage cheese
1 tsp. cinnamon or apple pie spice
1 c. apple juice concentrate
2 eggs, beaten
2 c. grated apples
4 c. whole grain, cubed bread
1/2 c. raisins
2 tbsp. butter, cut up

Mix together milk, dry milk, apple juice concentrate and eggs. Add the honey to this mixture if using tart apples, such as Granny Smith. Set aside.

Toss grated apples with lemon juice to prevent them from turning color.

In a greased 13"x9" baking dish, place 1/3 of the bread cubes (which should be slightly dry but not hard). Top with half the apples, cottage cheese and raisins. Sprinkle with cinnamon. Pour 1/3 milk mixture over ingredients in baking dish. Top with an identical layer of bread, apples, cottage cheese and raisins. Place remaining bread on top. Sprinkle with cinnamon and dot with butter. Allow mixture to soak through for 30 minutes, then bake at 350 degrees for 45 minutes.
