EASY AND FAST KOREAN - STYLE
BEEF
 
1 3/4 lb. beef steak about 1" thick
1 tbsp. sugar
4 cloves garlic, peeled & mashed to a pulp
3 tbsp. soy sauce
4 scallions sliced into thin rounds all the way up their green sections
2 tbsp. oriental sesame oil
2 tbsp. vegetable oil

Cut the beef diagonally into very thin slices. Put in a bowl. Rub with sugar and set aside for 10 minutes. Add garlic, soy sauce, scallions and sesame oil. Rub this in too and set aside for 15 minutes or longer.

Heat a large cast-iron frying pan on high heat until it is very hot. Brush lightly with oil. Lay strips of meat in it in a single layer. When brown, turn the pieces over and quickly do the other side. Remove and put in a warm serving dish. Do all the pieces this way and serve immediately.
