40 saltine crackers with unsalted tops 1 c. butter 1 c. firmly packed brown sugar 2 c. unsalted nuts (cashews or peanuts) 1 (12 oz.) pkg. semi sweet chocolate chips Preheat oven to 400 degrees. Arrange a single layer of crackers with sides touching in the bottom of a foil lined 11"x7" shallow baking pan. In a small saucepan, combine butter and sugar over medium heat. Cook, stirring constantly until syrup reaches hard ball stage, 250 to 268 degrees. Remove from heat and stir in cashews or peanuts. Pour syrup over crackers and bake 5 minutes. Remove from oven and sprinkle chocolate chips evenly over crackers. As chocolate melts, spread evenly over candy. Refrigerate 30 minutes or until hard. Break into pieces. Keep in air tight container. Makes 1 pound. |
