ROAST BEEF SALAD 
1 lb. rare roast beef from deli, cut into thin strips
8 stalks celery, sliced thinly on diagonal
6 green onions with green, chopped
1 tsp. capers, chopped
1 recipe Dijon mustard dressing

Optional:
Radishes, sliced
Tomato, chopped or in wedges
Shredded cheddar or grated Parmesan
Olives
Cucumber
Avocado slices
Hard boiled egg wedges

Assembly: Toss the meat, vegetables, and dressing together in a salad bowl and chill well. This is really terrific on a hot day!
