BROILED LAMB LIVER 
1 fresh lamb liver
1/2 c. parsley, chopped
1/2 c. scallions, chopped
1/2 tsp. salt
1/2 tsp. black pepper
1/3 c. lemon juice
2 tbsp. oil

Wash liver well. Drain, cut into bite sized cubes. Sprinkle with salt, pepper, parsley, scallions, lemon juice, and oil. Mix well. Broil 3-5 minutes, just to brown.
