CHEESECAKE CUPCAKES 
3/4 c. sugar
2 (8 oz. ea.) pkgs. cream cheese, softened
2 eggs, well beaten
1/2 tsp. vanilla
2 squirts lemon juice
1 pkg. Lorna Doones or vanilla wafers
fruit topping of your choice, canned

Line muffin tins with aluminum baking cups. Put one cookie in each. Mix eggs and sugar until smooth. Add cream cheese and mix until well blended. Mix in vanilla and lemon. Pour over cookies.

Bake at 325°F to 350°F for 15 minutes. Cool at least 1 hour. Top with canned fruit such as cherries, pineapple, blueberries, etc.

JThese are wonderful! I used Lorna Doone cookies as I love them. I leave them in the icebox overnight and put the fruit on the next day. They are good too without any fruit, just with a cup of coffee. Try them!
