CHEESECAKE CUPCAKES | |
3/4 c. sugar 2 (8 oz. ea.) pkgs. cream cheese, softened 2 eggs, well beaten 1/2 tsp. vanilla 2 squirts lemon juice 1 pkg. Lorna Doones or vanilla wafers fruit topping of your choice, canned Line muffin tins with aluminum baking cups. Put one cookie in each. Mix eggs and sugar until smooth. Add cream cheese and mix until well blended. Mix in vanilla and lemon. Pour over cookies. Bake at 325°F to 350°F for 15 minutes. Cool at least 1 hour.
