MISSING EGG SALAD 
1 lb. tofu
2 tbsp. tahini (sesame butter)
2 1/2 tbsp. pickle relish
3 tbsp. minced onion
2 tbsp. chopped celery or green pepper
1 tbsp. prepared mustard
4 tsp. black pepper
1/4 tsp. turmeric

Mash tofu with a fork; combine all ingredients and mix thoroughly. This may be stuffed in tomato halves and topped with alfalfa sprouts, or used as a sandwich filling.
