LEMON BUTTER CHICKEN 
salt
1 medium fryer, cut up
pepper
2 sticks butter
juice of 3 lemons
2 tbsp. paprika

Generously salt pieces of chicken on all sides. Use pepper according to taste. Place chicken in shallow baking dishes with bony sides up. Melt butter. Add lemon juice and paprika and pour over chicken.

Bake 30 minutes at 425°F. Turn; baste and bake 30 minutes longer. Serve with rice.

Yield: 6 servings.
