GRILLED PESTO STUFFED CHICKEN
WITH LEMON BUTTER
 
4 chicken breast halves, bones and skin intact
4 tbsp. thick pesto sauce
4 tbsp. unsalted butter
2 tbsp. freshly squeezed lemon juice

Run fingers between skin and flesh of breast to make a pocket, being careful not to tear or remove skin. Stuff 1 tablespoon of pesto into each pocket. Secure with toothpicks if necessary.
