CHICKEN AND BACON PIE | |
2 c. diced cooked chicken 6 slices Canadian or lean bacon, diced 1/4 c. butter 1/2 to 1 c. sliced fresh or canned mushrooms (optional) 1/4 c. flour 2/3 c. milk 2/3 c. chicken broth (may use all milk if desired) Seasoning salt and pepper to taste 2 crust pie dough Using half the butter, fry the bacon and mushrooms in a large skillet until bacon is browned. Remove from skillet. Add remaining butter and the flour to the skillet and cook for 2 minutes. Add the milk and stock and seasoning and boil until thick. Remove from heat and stir in the chicken, mushrooms and bacon. Pour into a dough lined pie pan and cover with top pie dough. Brush pastry with milk or egg. Bake at 400 degrees for 30 minutes or until bubbly and golden brown. Serves 4. |
