1/2 (10 oz.) pkgs. spinach
2 c. shredded Cheddar cheese (12 oz.)
1 1/2 c. cooked bacon
2/3 c. chopped onion
1 1/3 c. milk
4 eggs
3/4 c. Bisquick baking mix
3/4 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Grease pie plate. Rinse spinach under running cold water to thaw; squeeze out water. Mix spinach, 1/2 cup cheese, bacon, and onion in plate. Beat eggs, milk, baking mix, and salt and pepper until smooth - 15 seconds in blender on high or 1 minute with hand beater. Pour into pie plate. Bake until knife inserted comes out clean, 25 to 35 minutes. Top with cheese. Bake just until cheese is melted, 1 to 2 minutes longer. Cool 5 minutes. Makes 6 to 8 servings.
