SHRIMP AND CRAB CASSEROLE | |
Bake 15 minutes at 400 degrees. Serve immediately. Serves 10-12. 1 green pepper, chopped 2 stalks celery, chopped 1 med. onion, chopped 2 c. water 1 sm. jar pimentos, chopped 2 lbs. shrimp, cooked and peeled 1 lb. crab meat 4 hard boiled eggs, sliced 4 tbsp. butter 4 tbsp. flour 2 c. cream 1 c. sharp Cheddar cheese, shredded Dash nutmeg 1/2 tsp. salt 1/8 tsp.pepper 1/2 c. sherry 1 c. breadcrumbs, buttered Tomato slices Bacon Preheat oven to 400 degrees. Combine pepper, celery, onion and 2 cups of water and cook until tender. Drain. Add pimento, shrimp, crab meat, and egg. Set aside. Melt butter and stir in flour until smooth. Add cream and cook until thick, stirring constantly. Add cheese, salt, pepper and nutmeg. Stir in sherry. Combine sauce with seafood mixture and place in greased 3 quart dish. Cover with buttered breadcrumbs. Top with tomato slices and bacon strips. Bake. |
