CREAMY BLUE CHEESE DRESSING 
1/2 c. crumbled blue cheese, about 4 oz.
3 tbsp. half and half
1/2 c. mayonnaise or sour cream
6 tbsp. olive oil
1/4 c. white vinegar
1 tsp. Dijon style mustard (optional)
1/8 tsp. salt
1/8 tsp. black pepper

In a small bowl mash cheese with half and half until creamy. Add mayonnaise, oil, vinegar, and mustard, then salt and pepper. Using a wire whisk, beat until well mixed. Cover and store in refrigerator.
