MERRY CHERRY CHEESECAKE BARS 
CRUST:

1/3 c. cold sweet cream butter
1/3 c. firmly packed brown sugar
1 c. all purpose flour

FILLING:

8 oz. pkg. cream cheese, softened
1/4 c. sugar
1 egg
1 tbsp. lemon juice
1/4 c. each chopped glazed red & green cherries

Yield: 36 bars. Preheat oven to 350 degrees.

In 1 quart mixer bowl cut butter in chunks; add brown sugar and flour. Mix at low speed. Beat at medium speed, scraping sides of bowl often until well mixed (1 minute). Reserve 1/2 cup crumb mix for topping. Press remaining crumb mix into 8" square baking pan. Bake near center of 350 degree oven for 10 to 12 minutes.

Prepare filling. Spread over crust; sprinkle with remaining crumb mix. Continue baking for 18 to 20 minutes or until filling is set and top is lightly browned. Cool. Store in refrigerator.

FILLING: In 1 quart mixer bowl beat cream cheese, sugar, egg and lemon juice at medium speed until fluffy (1 to 2 minutes). Stir in chopped cherries. More cherries can be added. Colored candied pineapple can be with the cherries or in place of.
