“BLUEBERRY OATMEAL BANANA CINNAMON MUFFINS” IS IN:

BLUEBERRY OATMEAL BANANA
CINNAMON MUFFINS
 
2 ripe bananas, crushed
1 cup fresh or frozen blueberries, (if using frozen, let thaw for about 20 minutes)
1 egg
1 cup all purpose flour
1 1/2 cups oats
2/3 cup brown sugar
1 tsp. baking powder
2 tsp. cinnamon
1/2 cup butter
1 tsp. vanilla

Heat oven to 350°F.

Crush bananas in a small bowl and set aside Beat together sugar and butter. Beat in egg and vanilla. Stir in crushed bananas and blueberries.

In a medium bowl, mix together the flour, oats, cinnamon and baking powder.  Stir into banana mixture. Grease 12 muffin tins, or use muffin liners.  Fill about 3/4 way with batter.

Bake for 20 minutes or until toothpick inserted in the center comes out clean.

This recipe makes 12 muffins.
