BANANA OATMEAL MUFFINS | |
1/2 cup (1 stick) butter 1/2 cup sugar 2 eggs 2 ripe bananas, mashed (about 1 cup) 3/4 cup honey 1/4 cup milk 1 3/4 cups all-purpose flour 1 tsp. baking powder 1 tsp. baking soda pinch of salt 1 cup oatmeal 1/2 cup chopped walnuts 1 cup raisins Cream butter and sugar. Add eggs, bananas, honey and milk. Add flour, baking powder, baking soda, salt and oatmeal. Stir until blended. Add nuts and raisins. Spoon in greased muffin tins. Bake at 375°F for 20 minutes. Makes 18 muffins. |
