CAULIFLOWER "MASHED" POTATOES 
1 head cauliflower
1/4 cup skim milk
salt and pepper
paprika

Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in 350°F oven until bubbly.

I also added some garlic and even some cream cheese to this and it was great. It was very close to mashed potatoes. This is great because my husband has to watch the carbs and this is a perfect solution and is pleasing for everyone else as well.

This was soooo worth putting into your mouth! I have been recently diagnosed as diabetic, so I'm looking for alternative dishes to those I should avoid. I would prefer this to mashed white potatoes in any event!

I added both garlic powder and onion flakes, then I covered it with grated parmesan cheese and threw on a few french fried onions 'cause they were in the front of the cabinet and it sounded good.

This is a dish that will be served often at my house. Thanks for sharing!

Some folks won't even try cauliflower mashed potatoes because it sounds odd. Too bad for them. We DO jazz them up with garlic and various cheeses. A few potato flakes are good also. Try it!

I heard greek yogurt makes the consistancy more like mashed potatoes, and you're supposed to lightly brown the cauliflower in the oven. I haven't tried it yet but I plan to soon!

Added one baking potato for the skeptics in my house (so they'd see the skins), garlic, sauteed onion and bacon cheddar cheese (you can use bacon bits cheddar if you don't have it) actually passed it off as potatoes! Will make again- oh used greek yogurt, not milk.

In addition to seasonings for cauliflower mashed potatoes, I add chopped green or red pepper, various seasonings from my cabinet as well as low fat sour cream or cream cheese (I'm not a big fan of cauliflower, so the more seasoning, the better). Once it's all mashed together, I put it in a casserole dish, sprinkle low fat shredded cheddar cheese on top and bake in a 350°F oven until cheese is bubbly. I guess you can call it a "twice baked potato!"

My wife did not want to eat ity because she hates cauliflower. After she tried it, she said she preferred this to mashed potatoes, a former favorite.

I used non fat Greek yogurt, low fat cream cheese, onion, garlic and parmesean cheese. Being a diabetic, this is a big find for me.

I don't get all those comments about people adding cream cheese or butter to what's supposed to be a HEALTHY alternative to mashed potatoes. Clearly a lengthy conversation with their doctors (or nutritionists) is in order.

Jon, So you think Margarine etc is better for you than butter huh? LMAO... you are falling for what made everyone fat in the first place. I recommend reading the primal blueprint and begin to understand why this country is so fat, has heart disease etc.

Jon in the Netherlands and all the other health nuts. Give me a break. Everything in moderation. A little cream cheese and whole milk is not going to hurt anyone. I really do not know how are great grandparents lived. They supplier their own cream, milk, meat. They ate eggs and they seemed to live just fine.

A healthy alternative to all of the cream and cheddar cheese that everyone is adding is cottage cheese. Throw in a little onion for a FANTASTIC and healthy side dish!

Ok. Though this recipe is good, I don't see any reason the word mashed has to be in quotations. We get it.. They're mashed. Or are they mock mashed? How can you mock mash something? Can they not be mashed if they are not potatoes?

Very good... seems to me, the word "Potatoes" is the word to put in quotes, not "Mashed". After all, they are mashed, but aren't potatoes!
