2 slices bacon, chopped 1/2 lb. ground beef (I use extra lean) 1 large white onion, chopped 1 bell pepper (green or red), chopped 2 cloves garlic, crushed freshly cracked black pepper, to taste 1 (15 oz.) can beef broth (Swanson) 2 cups instant potato flakes (Idahoan) shredded cheddar cheese, for topping (optional) In a medium pot cook bacon over medium heat until crispy. Add ground beef, stir and cook till there is no pink left, about 4 to 5 minutes. Add onions, peppers and garlic. Season with black pepper. Mix and cover for 5 minutes. Add beef broth, turn the heat up to high and bring to a boil. Turn the heat off, add the potato flakes and mix thoroughly. Serves 4 to 5. Optional: Spoon into small aluminum pans, top with cheddar cheese and melt under the broiler. Submitted by: Tim B. |
