ZINGY MASHED RED POTATOES 
4+ red potatoes
Kosher Salt
4-6 tbsp. stick butter
1/4-1/2 cups milk
sour cream

1. Rinse the red potatoes and scrub them. Peel the potatoes, being sure to leave some of the peel on them.

2. Put your chopped potatoes in a pan and fill with cold water until it barely covers them.

3. Boil on high for ten minutes. Place a wooden spoon on top of the pan to prevent boil overs.

4. Lower the heat to medium-high and stir the potatoes. Cook for fifteen minutes.

5. Drain the potatoes and place them back in the pan and cook them over medium heat for 2-3 minutes to get rid of some of the moisture let inside. Stir them occasionally so they don't stick.

6. Slice the butter into the potatoes and mash them, being sure to leave some chunks.

7. Season to taste and add sour cream a tablespoon at a time. Stir and taste between tablespoons to reach the right taste.

Tip: You may add chopped fresh chives, if desired.
