CAULIFLOWER "MASHED" POTATOES 
1 head cauliflower
1/4 cup skim milk
salt and pepper
paprika

Cook cauliflower until fork tender. Place cauliflower (in pieces), skim milk, salt and pepper in blender. Whip until smooth. Pour cauliflower into small baking dish. Sprinkle with paprika and bake in 350°F oven until bubbly.

Great dish. I did 1 cauliflower head (steamed and mashed), then 1 pint of fat free sour cream (270 calories per pint), chopped green and red peppers (1 each), a little carton of those fresh mushrooms, 8 oz. reduced fat shredded mozzarella (560 calories per 8 oz.), and a bunch of pepper...then baked for 30 minutes at 400°F.

Excellent, hardy, and unless mushrooms and peppers have a ton of calories... you're around 200-225 calories for a HUGE helping (1/4 of the rectangular Pyrex dish).

Tasted just like mashed potatoes to me - I actually added some almond milk instead of skim. Some garlic salt, minced onions and then a clove of garlic. Then I topped it off with some shredded cheddar cheese and nuked it - DEELISH!!!

I am about to prepare this recipe but also will put a twist on it by baking a potato cutting in half, scoop out potato (throw away) then stuff the potato with the cauliflower mixture, green onion and sprinkle with cheese and bake.
