CHOCOLATE ZUCCHINI CAKE 
3 c. flour (1/2 white, 1/2 wheat)
1 tsp. salt
4 eggs
2 1/2 c. sugar
1 1/2 c. vegetable oil
3 oz. unsweetened chocolate, melted
3 c. shredded, drained zucchini
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
2 tsp. vanilla

Sift together flour, baking powder, baking soda and salt. Set aside. Beat eggs in a large bowl and gradually add sugar. Gradually beat in oil. Add chocolate and vanilla. Stir in dry ingredients. Fold in zucchini. Pour batter into a greased and floured bundt pan. Bake 1 hour and 15 minutes at 350 degrees. DO NOT OVERBAKE. Cool about 15 minutes in pan, then remove to rack. Sprinkle with powdered sugar or frost with glaze.
