CREME DE MENTHE BARS 
3 sq. melted bakers chocolate
2/3 c. oil or butter
2 c. brown sugar
3 eggs
1 1/4 c. flour
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking soda

FILLING:

4 c. powdered sugar
2 tbsp. cream or milk
2 sticks butter
1 1/2 oz. creme de menthe (optional)
1/2 tsp. peppermint extract
2 to 4 drops green food coloring

FROSTING:

6 oz. chocolate chips
2 tbsp. oil or butter

Mix bakers chocolate, oil, brown sugar, eggs, flour, vanilla, salt and soda. Spread into a greased jelly roll pan (13 x 15). Bake 15 minutes at 350 degrees. Cool.

Beat together powdered sugar, cream, butter, creme de menthe, extract and food coloring. (If stiff add more milk). Spread over first layer and refrigerate until firm.

Melt chocolate and butter, beat by hand and spread over second layer (green layer). Refrigerate or freeze. Cut into small pieces as it is very rich.
