“JIFFY CORN CASSEROLE” IS IN:

JIFFY CORN CASSEROLE 
1 (15 oz.) can whole kernel yellow corn, undrained
1 (15 oz.) can cream style yellow corn
1 (8 oz.) carton dairy sour cream
2 eggs, beaten
1 (8 1/2 oz.) box Jiffy corn muffin mix
1/2 cup (1 stick) butter, melted

Mix all together and pour into large, lightly oiled casserole dish.

Bake at 350°F for 55 to 60 minutes.

Although much of my family likes this casserole as is, I prefer it less mushy. Here is what worked for me:

Drain the canned corn; 4 oz. sour cream (1/2 cup); 1 and 1/3 box of Jiffy. (I also added 1 tbsp. brown sugar)

I baked it in a 9 x 13 pan at 350°F for 50 minutes until the edges were golden brown and toothpick came out clean.
Everyone raved. I'll make it this way from now on.

This dish is always a hit with no leftovers at family holiday dinners. The only change I make is using 2 cans of corn instead of 1 can of corn and one can of cream corn.

Substitute French Onion dip for the sour cream, add some chopped green onions & shredded cheddar cheese takes this casserole over the top! Can't wait to try the green chilis next time.

When I make mine I drain the whole corn....To those who this version...Are you saying it is not soggy? Not draining the whole corn would make it soggy!!
