SQUASH AND CORN 
3 zucchini (1 1/2 inch diameter)
2 tbsp. butter
1 sm. can green chili, peeled and diced
1/2 c. shredded longhorn cheese (optional)
1 sm. pkg. frozen corn
1 med. onion, diced

Canned whole kernel corn can be substituted

Melt butter in large skillet add diced onion, zucchini, scrubbed, quartered and sliced into 1/4 inch slices, corn and chili. Cook over medium heat covered - until tender, stirring occasionally. Do not over cook. Salt to taste. Pour into serving dish and sprinkle with cheese.
