SUE'S CORN - ZUCCHINI MEXICANA 
2 lb. zucchini, sliced
1 lg. onion, chopped
2 tbsp. butter
2 (10 oz.) pkg. frozen corn
1/2 lb. Old English processed cheese, grated
1 (4 oz.) can green chilies
Salt and pepper to taste

Saute squash and onion in butter until just tender. Cook corn until just tender and drain. To squash and onion, add corn, cheese and green chilies which have been seeded and chopped. Cook over low heat until cheese is melted, stirring occasionally. Season with salt and pepper. Pour into a 2 quart casserole and bake uncovered at 350 degrees for 30 minutes.
