CORN SUCCOTASH 
3 cups corn (grilled is better)
1 cup zucchini
3/4 cup red bell pepper
3/4 cup green bell pepper
1/4 cup red onion (added for addition flavor)

Wrap the corn in foil with 2 tablespoons of butter and place on grill until almost fully cooked. Sauté zucchini and bell peppers in 2 - 4 tablespoons butter (depending how much you like). Add red onion and grilled corn and cook for only a couple minutes more. Season with salt and pepper to taste. I added garlic powder, too.

Servings: 2 adults and 1 child
