SIMPLE CORN AND LIME BEAN
SUCCOTASH
 
This was a recipe given to me by a 90+ year old friend years ago. She said that her mother cooked her succotash this way. We like it with hot buttered cornbread.

4 slices of bacon
1/2 cup chopped onions
2 cups fresh or frozen sweet corn
2 cups fresh or frozen lime beans
water to cover
salt and pepper, to taste

Cook bacon until done and set aside. Cook onion until soft but not brown. Pour bacon drippings and onions in sauce pan. Add corn, lima beans, Salt and pepper and water to a almost cover. Simmer covered for 30 minutes. Pour into serving dish and add crumbled bacon to serve.

Note: We like to add hot pepper to this recipe.
