CARROT BARS 
4 eggs
2 c. sugar
1 1/2 c. oil
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 c. grated carrots
1 1/2 c. coconut
1 1/2 c. walnuts
1 tsp. vanilla

Beat eggs well; add sugar and beat until fluffy. Add oil and beat again. Sift dry ingredients together, add and beat again. Mix well. Bake on large cookie sheet or in two 9 x 13 inch pans at 350 degrees for 30-35 minutes.
