ZUCCHINI - PINEAPPLE BREAD | |
3 eggs 2 c. sugar 2 tsp. vanilla 1 c. oil 2 c. zucchini, grated 4 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 c. crushed pineapple, drained 1 c. nuts Beat eggs until fluffy; add sugar, vanilla and oil. Sift together flour, baking powder, baking soda and salt; add to egg mixture. Add zucchini, pineapple and nuts. Mix only enough to evenly distribute ingredients. Bake at 325 degrees for 1 hour. Yields 2 loaves. |
